List of ingredients for this dip:

1 large ripe avocado.
2 green onions, minced.
1/4 cup of bottled mild salsa.
2 teaspoons of fresh lemon juice.
1/2 clove garlic, minced.
1/4 teaspoon of salt.
Pinch of freshly ground black pepper.

Instructions:

Peel the avocado and remove pit.

In a bowl, mash the avocado using a fork.

Stir in the onions, salsa, lemon juice, minced garlic, salt and pepper.

Here is a great festive recipe that you may want to make this Christmas:

Ingredient list:

12 ounces (1 packet) of vanilla wafers, crushed.
1/2 cup of rum.
1/2 cup of brandy.
1/2 cup of honey.
1 lb of ground walnuts.
Powdered sugar.

Method:

Combine all ingredients except the powdered sugar, blending thoroughly.

Roll into small balls, then gently roll in the sugar.

Refrigerate.

Ingriedient list:

1 1/2 teaspoon of chopped shallots.
1 garlic clove.
1 teaspoon of oil.
2 cups of blackberry pulp.
2 teaspoons of honey.
1 whole clove.
1 teaspoon of cardamom.
1 jalapeno, seeded and diced.
1 1/2 cups of Port wine.
4 lamb chops.

Instructions:

Saute the shallots and garlic in hot oil until translucent.

Mix the blackberry pulp, honey, clove, cardamom, and jalapeƱo; then add the port.

Reduce to half, then add the add remaining ingredients.

Grill the lamb chops for about 4 minutes each side for medium.

Serve with sauce.

List of ingredients:

1/3 cup of golden raisins.
Water.
24 oz catfish fillets.
1/4 cup of all-purpose flour.
1/2 teaspoon of dried sage.
1/2 teaspoon of freshly ground black pepper.
Vegetable cooking spray.
1 tablespoon of margarine.
3 tablespoons of lemon juice.
1/4 cup of Chablis.
1/4 cup of Dry Sherry.
1 tablespoon of soy sauce.
Fresh sage leaves.

Instructions:

Place the golden raisins in a small bowl. Add enough water to cover, then allow to stand for 10 minutes. Drain, and set aside.

Rinse the catfish fillets with cold water, and pat dry.

Combine the flour, sage and pepper; dredge fillets in flour mixture to thoroughly coat.

Coat a skillet with cooking spray, then add margarine, and place over medium heat until it melts.

Add the fillets, lemon juice, and reserved raisins.

Cover, reduce heat, then simmer for 10 minutes.

Remove cover, and turn the fillets.

Add the Chablis, sherry, and soy sauce to the skillet.

Bring to a boil, then reduce heat and simmer 5 minutes or until wine mixture is slightly thickened.

Transfer the catfish fillets and wine mixture to a serving platter.

Garnish with fresh sage leaves.

Here is a great onion recipe to have as a snack or as a side to a main meal:

List of ingredients:

1 1/2 cups of flour.
1 teaspoon of salt.
1 1/2 cups of beer.
3 large onions, cut into 1/2-inch slices.
Hot oil, for frying.
Salt, to taste.

Method:

Combine the flour and the salt.

Stir in the beer and beat until smooth.

Chill for 3 hours.

Separate onions into rings, dip them in the batter and fry in oil until golden brown on both sides.

Sprinkle with salt.
